           Sovrapporre il prosciutto e il grana sulle fettine di fesa, arrotolarle, e fermarle con uno stuzzicadenti (saltimbocca).

  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;span&gt;&#xD;
        
            ﻿
           &#xD;
      &lt;/span&gt;&#xD;

  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Rosolare in padella lo scalogno con olio d'oliva e il trito di erbe aromatiche, aggiungere i saltimbocca e dopo averli rosolati sfumare con birra ultimando la cottura con brodo vegetale.

           Per l'agrodolce: 300 cc. di vino bianco, 1 bicchiere di aceto bianco, 1 bicchiere di acqua, 1 cucchiaio di sale grosso, e 3 di zucchero, una tazzina da caffè di olio extra vergine.

    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;br/&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Bollire al dente, nell'agrodolce, 2 carote, 3 canne di sedano, 1 scalogno, 1 peperone, tutto a dadini e 4 foglie di salvia.

  &lt;p&gt;&#xD;
    &lt;br/&gt;&#xD;

           Dividere la carne in piccole parti, passarle nell'uovo, successivamente nel misto di farina e pan grattato e friggerle.

           Lasciare riposare la carne per 2 ore con: cipolla, 2 carote, 2 gambi di sedano (tutto tagliato), tre foglie d'alloro, noce moscata e 1/2 litro di vino rosso.

  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;br/&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;

           Trascorse le due ore, rosolare le verdure tritate con olio e burro e aggiungere la carne scolata, sfumare con un bicchiere di vino rosso, sale q.b., ultimare la cottura aggiungendo brodo vegetale.

frullare: 200 gr. di tonno, capperi, mollica di pane bagnata in aceto
ed acqua, 1 patata lessata, passata al setaccio, aggiungere maionese
(fatta con 3 tuorli ).

    Mettere le fette di
vitello su un piatto di portata e ricoprirle con la salsa tonnata.

  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    
                    
    Questo piatto si
sposa bene con l'insalata russa.

            3 uova intere
           &#xD;
      &lt;/p&gt;&#xD;
    &lt;/li&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;p&gt;&#xD;
        
            noce moscata
           &#xD;
      &lt;/p&gt;&#xD;
    &lt;/li&gt;&#xD;
  &lt;/ul&gt;&#xD;
  &lt;p&gt;&#xD;
    
          Bollire 1 litro di latte, sbollentare pane e farina, raffreddare,
aggiungere le uova, impastare e fare dei gnocchetti.

    &lt;b&gt;&#xD;
      
           Per il sugo:
          &#xD;
    &lt;/b&gt;&#xD;

          Rosolare con olio, un trito di
scalogno e 30 gr. di pancetta, aggiungere la salsa di pomodoro, 200
gr. di fagioli borlotti ed un trito di rosmarino fresco.
